My dog used to do this quite a bit. I used to feed her in the morning, which
didn't work so well, since working stimulated her, making her have to poop.
So, I now feed her in the evening, and this has pretty much eliminated the
problem.
Try giving her a chance to go right before you work her. That can help, too.
