All the students have to sign the agreement. Its not just a me thing. And
also furthermore, the college has not raised any concerns about my class. It
was more of a me wondering sort of thing. I know there have been other blind
students at my college to take biology, none of which have dogs.

I wonder if all students have to sign a statement of complete safety and if
all students are told what kind of shoes they are to wear. If this only
applies to you it is discriminatory policy. The college may not easily be
convinced about you or your dog's safety.
