Sometimes I'll actually touch the person , want my dog to follow 
and say, "Follow her" or follow him" or use their name if it's 
someone I know.  And quite often I'll go ahead and have the 
person walk where an instructor would walk, and then they can 
give me directions I can hear.  I do this especially if it's a 
long distance thing, not just in a restaurant.  Hope this helps.
