Ewe, I hope nobody is eating while reading it, too. In snow especially it is
very easy to miss the second load.

Marianne,
I am actually surprised that grabbing onto her harness works.... Doesn't she
try to move forward when you hold the harness? I guess she wouldn't as long
as you do not pull back on it... But, with both of my dogs it comes natural
for them to pull forward if you pull back on their harness. 
Mambo sometimes likes to walk and poop. I just keep him on a short leash and
keep my right hand close to his collar, so that he can't walk very far once
he's started. My left hand trails his back, so that I can get into the
proper pick-up position (I guess those would be called the 3 P's *smile). Of
course, I am left-handed so I pick up with my left hand usually, so it may
be different for right handed folks. 
What's really a pain is when you bend down to pick up and then your dog
wanders a bit and drops another load! Then you have to search all over for
the new pile. Fun, fun, fun.

I am sure some people will have a comment about this technique.  I have a
scooter pooper so I leave her harness on.  When she begins to poop I grab
the harness so she can't move and when she is finished I know where to find
her gift.  Yes, the school taught me to always remove the harness before
relieving my dog but grabbing the harness is the only thing that will keep
her from moving.  She can almost go in a complete circle if I don't do this.
