Welcome to the group. Michael gave you some good tips.
However, I have a concern/question. What are the health department 
regulations in your area regarding animals and commercial food 
preparation? Those, I think, would still apply to you in this case as 
the alteration, as far as I understand, of local health codes apply only 
to customers entering a place of public accommodation while accompanied 
by their Service Dog.
Perhaps, you should leave Darcy home, or request from the venue a safe 
place in which to keep Darcy crated while you're doing your demonstration.
