Hi Henry.
The most common borders are garter stitch, knitting every row, or seed
stitch. Seed stitch is:
Row 1: Knit 1, purl 1.
Row 2: Knit the purl stitches and purl the knit stitches.
You need at least 5 stitches in the border to stop curling, but you can have
more if you want a wider border. For the ends, you could work more than 5
rows. Dishcloth patterns often have around 8 rows of top and bottom border.

I am planning to knit a scarf with 31 stitches on my size eight Denise
Interchangeable Circular Needles in the Stockinette stitch, and, I would
like to know what borders for the top, bottom and sides of the scarf that
won't curl up on me that I should use.
I will be using Red Heart Four Ply Knitting Worsted yarn for this scarf.
Thank you for your help.
Henry
