How about playing in the sand, to get used to getting dirty and making things with his hands.  Then try clay.  Try our arcives and look up kids crafts.  Henrietta has contributed a lot to the list.

All I can say is what a lucky goy your nephew is to have an uncle lilke YOU! 
You can make such a big difference in his life and your attitude is amazing. 
You describe what you want to do, and you are describing exactly the qualities that an artist/artisan must have:
putting your hands into materials
making a mess
exploring tactile effects and substances using materials as a means of taking an adventure into the unknown and unexplored PLAYING and being a child, at any age.

I am a former Fine Arts Professor, and just lost my sight less than three years ago...you are exactly the kind of person who excelled in the art studio courses and when you relay this kind of thinking to your nephew through various projects you will do WITH him, you will be making ART together no matter the materials or projects. Go for it.

Art/Crafts are for everyone to enjoy and we learn things through them that cannot be learned in any other way.
