Terry:

DK is a weight of yarn, just like worsted is a weight classification.  Dk is finer than Worsted, and from what you have said, you use worsted weight for your plastic canvas work.  If you get a smaller count canvas, perhaps you can use DK weight yarns.  DK can be cotton, but it can be any fiber, not just cotton.  Again it is the weight/thinness/thickness of the strand of yarn.
