If you give me your address, I can make a few easy samples of coasters she could make.  
If I do a actual sample, you could also follow it and she could see the colors.
The designs can be expanded to make eye glass cases and more.  When you feal my work, it is the evenness, neetness and hiding of loose yarn that makes the beauty of this craft.

What is her name.  You can make letters with a background.  I make items with NFB and the Whozit.  It was hard designing the Whozit, but I did it.  
Being she is sighted, I think, I could copy some of my pictures of my work for her.

Hi there. I am going shopping sometime next week for craft supplies.  My daughter liked doing potholders on her loom, but she is getting bored with them.  She's only five.  She wants to learn to knit, but I am not ready to teach her that yet.  Then I thought of the plastic where you can put stitches in and make things.  She likes to create, so I thought it would be fun for her to decide what she wants to make and then do it.  But how do I get her to that point with canvas?  Do I just buy some, give her some yarn, a large needle, and see what she does, or is there a set of patterns  shewill be able to look at and follow?  Any thoughts on this welcome.  I kind of enjoy doing that, but I'm not good at making straight rows; yuou'd think it would be easy with all the holes right there, but no; I always get crooked lines.  Anyhow, thoughts on this kind of project would be appreciated.  Myself, I'm just snagging all the yarn I can.
