Are these pins different than the ones Theresa uses.  It sounds like it.  Hers, you can not slide beads past the coil.

That is why you need the safety pins with the coil.  You open up the  coil so you can twist the bbeads around to the back side of the pin.  The  coil holds the beads in place.  When you get the beads on each pin you  slide the bottom of the pin onto the larger safety pin that is pinned to your  shirt.  
You will slide these smaller pins around the coil of the larger pin  for the same reason.

further, I've only taken on safety pin beading class, we put the beads on the pointy side of the safety pin, now I'm guessing we will be adding the other pins and beads to the one that you actually pin to your shirt or whatever, how does one do this without the decorative part falling  off?
