Yes, green tomatoes are not yet ripe tomatoes...If you have them green and
do not use them within a day or so, guess what...they turn ripe or red.
Therefore if purchased green be prepared to use them soon. There are many
recipes and the greatest one is from Fran Flagg's Fried Green Tomatoes at
the Whistle Stop Café, there is a BARD cookbook with this name with all the
Southern recipes included, great book to download. I am simple with my
tomatoes, I do cut them about one quarter to one half inch thick, we dip
them in a beaten egg, then in all types of breadcrumbs mixed with a little
flour and salt and pepper, fry them in oil, preheated until just brown on
each side, drain on paper towel and dab with a little Mayo in the middle and
salt and pepper again, That is some good eating. Yes, squash and eggplant
can be done this way also.
