I had the same problem.
Why not go through all 3 loops on peg 1 at the beginning?

Hi all, I have enjoyed making these hair scrunchies, have made 4 so far.
I've found the basic bind off to be a bit too tight for me so I did a super
stretchy bind off which works better for me. I'll include instructions
below.
I did a couple of the scrunchies using garter stitch, 1 row knit, 1 row
purl, and they came out nice, might want to add a couple more rows. Am going
to try using the u knit stitch on my next one.

Super stretchy bind off
You have completed your project, wy yarn should be behind last peg, take wy
and wrap the whole loom three times then cut. This will leave you with a
long tail in which to do your bind off.
1. Bring working yarn to front of loom between pegs 24 and 1 2. Lay wy in
front of pegs 1 and 2, at this point do nothing with peg 1 3. Lay wy below
the loop on peg 2, pull wy up thru the loop as if to do a purl stitch except
pull wy completely up 4. Place wy back in front of peg 1, above the loop,
you will now have 3 strands in front of peg 1, pull the wy down thru the 2
bottom strands/loops 5. Take wy back in front of pegs 2 and 3, bring wy up
thru loop on peg 3, down thru loops on peg 2 6. Up thru peg 4, down thru peg
3, up thru peg 5, down thru peg 4 and so forth.
7. At the end, up thru peg 24 down thru peg 1, here I do another up thru peg
2, down thru peg 1.
8. Remove project from loom and tie a knot.
