Hi,
I am not Barb, but can help.
Wrap your loom around the perimeter at least 2 times, then cut your yarn.  
Now thread your yarn onto your tapestry needle.
With your working yarn coming out of the loop on peg 24 
Pull the working yarn across the front of peg 1 and insert your needle
through the loop on peg 2 beginning at the base of the peg and exiting the
loop toward the top of the peg where there is a slight knob on the top.
Now take your needle and beginning at the top of peg 1 go down through the
loop on peg one exiting at the base of the loom.
Now move to peg 3 and start again at the base going up through the loop on
peg 3  and then moving back to peg 2 going down through the loop on peg 2.
Note this work is done all on the outside of the loom where the anchor peg
is located.
You will continue doing this until you have reached peg 1 again.  
Then you can cut a few inches for a yarn tail and weave it in.
How I did this was to go in and out of the loop on peg 1 much like you do in
hand sewing, creating a small knot, then cut my yarn.

I use the thick ones too. I think they're about 4-5 mm or so. My stitches
also buckle in the middle but I don't think it detracts from the look of the
scrunchy. ALl the scrunchies they sell in the store also scrunches up in the
middle, hence the name? And I don't think the elastic will show through
unless you use a really thin yarn and the stitches are really big.
