I'll bet that you had to go out and find your Husband a new bottle of 10
year old brandy to replace what you took.
Greg and Hettie, I am the Great Grand nephew of sir James M. Barrie,the
Author and Playwright.
My family said that he and I look alike, and write alike. I am currently
reading his biography,and I am finding more similarities between him and
myself. It is interesting, and also scarry.

Here is the recipe. Had to sort of compile it from my sometimes cryptic
scribbling that's why it took this long.
This same recipe could've cost me my marriage. My niece asked me to bake
four of them for her wedding. It was to be cut into small pieces, wrapped
and handed as gifts to the people attending the wedding.
Everything went well until I went to my hubbies cabinet and took the brandy.
Thank goodness he is not the violent type because I took his very special
10-year old KWV brandy. It is rather expensive and a very special brandy.
Fortunately it definitely made a vast difference to the taste of that cake,
hehehe.
Well here it is, enjoy.

Hettie Fruit Cake

Ingredients

1. Half pound butter;
2. 4 Eggs;
3. Half pound Sultanas;
4. Half pound currents;
5. Quarter pound mixed peal;
6. Half pound raisons;
7. Quarter pound cherries;
8. 1 packet pip less dates;
9. 1 table spoon vinegar;
10. One quarter teaspoon salt;
11. 2 cups sugar (I prefer brown sugar); 12. 1 knippy Brandy; 13. 1 teaspoon
bicarbonate of soda; 14. 3 cups flour; 15. 1 teaspoon mixed spice; 16.
Quarter cup milk.

Method

1. Place butter, sugar, fruit (except cherries) brandy, vinegar, in a pot;
2. If dates are compacted in its wrapping, loosen them before adding to the
other dried fruit. You can leave it as large pieces or cut them if
preferred; 3. Add 1 cup water and mix well; 4. Cook for 10 minutes while
stirring to prevent burning (I microwave the fruit rather than cooking on
the stove); 5. Remove from stove; 6. Add cherries, you can cut them in half
or smaller if you wish; 7. Dissolve bicarbonate of soda in milk and add to
fruit mixture; 8. Leave to cool (I prefer leaving it overnight for better
results).
9. Mix all dry ingredients;
10. Beat eggs well;
11. Slowly add a little flour mixture to the fruit and mix well; 12. Add a
little of the egg to the fruit and mix well; 13. Repeat adding flour mixture
and beaten egg separately to the fruit until done.

How to bake

1. You can bake the recipe in 1 large container or in 2 smaller ones; 2.
Place 2 layers of brown paper to cover the bottom(s) of the pans; 3. Cover
the sides with 2 layers of brown paper and ensure that it stick out about an
inch or two above the sides; 4. Cover the bottom and sides with wax paper
and spread butter at the bottom and the sides of the paper.
5. Don't skip or neglect this step because the baking time of the cake will
leave you with hard crusts at the bottom and sides of the cake.
6. Don't fill the pan(s) more than 3-quarter to leave enough space to rise;
7. To prevent the cake from falling in at the middle because of the weight
of the fruit, place some more dough in the middle of the pan.
8. Bake for 3 hours in a cool oven 120C.
9. Remove from the oven and sprinkle some brandy over the cake; 10. Allow to
cool in the pan before placing on a cool rack; 11. Carefully take off the
paper around the cake and let cool completely before storing.
12. Cover cold cake with gladwrap and put  in a cool place.
13. Open the cake once a week or 2 weeks and sprinkle brandy.
14. Leave the cake a month or longer to mature.

Note: The cake keeps well in the freezer for later use.

Hettie, I make good use of the freezer when it comes to most baked goods.
It's the only way they don't vanish immediately. :) This is particularly
true of anything made with sweetened condensed milk!

Please do share your Christmas cake recipe if you have a chance. My mother
says she used to make one that sounded very similar, but it was before my
time, and I have not seen a recipe or sampled one.
