That makes sense. I grew up doing canned fruits and pickles, so maybe that's 
why the 1/2 inch stuck in my head. I've never read ooks on canning.
I also like your adaptation of letting the jam cool before putting it in the 
jars, and then processing for a short time. I have worked with the hot jam, 
but sugar burns are nasty. Yikes. I never thought of doing your method. 
Thanks for that.

We have a lot of ripening blackberries around now, so this might just 
inspire me to get some. They're thorny to pick, so perhaps that's a task to 
deligate. (wink)

Jean, the book I used said 1/4 for jams and jellies and I think it was 1/2
for pickles.  It seems to me that different recipes gave different
distances.  I even saw a couple that said 1/8, that's a little too close for
me.

Most of the recipes gave a distance so I would just follow it.

I use my 3 gal stock pot, I have a canner, but it is quite large.  I think
it will hold seven quarts at once.  I can put 6 pints in the stock pot.  I
think 8 or 9 of the little jelly jars can fit in it.  I've even used the
smaller 2 gal pot for the little jelly jars.

The main reason for using enamel or stainless steel is because if you are
canning using salts and vinegars you can have a reaction with the metals.
This can affect the taste and color of your food.

Yes, they did. Nice job. I grew up canning things at home, and then used to
make a few jams and pickles on my own. i haven't done that in years. You
inspire me to buy a new canner or large stock pot. I appreciate the idea of
how to use a regular stock pot for smaller batches or smaller jars. We just
got an induction stove, so i had to get rid of my old trusty large pots that
weren't compatible. But stainless steel would definitely work.

BTW, I have always heard that your product should be 1/2 inch from the top,
not 1/4. Is 1/4 inch enough hed room in your experience?
