I do think this sounds very good.  It will have to be classified as intermediate level, not for beginners.  You should include making a gauge as part of this class.  Since you are doing this without a pattern people need to know that and how to calculate all of this.

Kathryn, since I generally design my own patterns, I am not a very good resource for patterns.  But if it can wait until January, I can do a class on how to design one.  A  quick summary would be to measure hip and bust and figure out a gage which is worth talking about; start on a circular needle with two to three inches of ribbing; increase a few stitches evenly around if desired, although not necessary; knit stockinette until about two inches below the underarm; then switch to seed stitch.  Continue in seed stitch shaping underarms and neck.  We would want to talk about shaping, but that takes care of the basics.  Casting off and sewing the shoulder seams is about all there is left.  That may seem like an over simplification.  Then we will do a class on it.  Sweaters and vests should be two to four inches larger than the bust measurement.  Today's styles are a little snugger than twenty years ago, so some judgment must be used. Of course, there is much more that could be said, but probably not in a single message. 
Oh yes, if you want a cap sleeve, you can keep the sides straight clear up to the shoulder seam.  You just have to divide the stitches in half and knit back and forth instead of around in time to leave room for the arm wholes. If you are using the seed stitch, you work exactly the same clear to the top and cast off in seed stitch as well.

Hi Ramona,
I too am getting the hang of knitting.  Do you have an easy knit vest that you might reccommend for those of us who need to start simple?  I know there’s lots of knitting patterns to choose from, but really mind boggling to us new knitters.
