Thanks for a great class.  I think someone said this in class, but I would use the U stitch instead of the flat knit.  This will make your stitches looser and still give the same effect.  

Instead of laying the yarn flat against the peg, make a U shape around the peg, before knitting off.  This gives more slack in each stitch.
