I just sent out a couple recipes from Deb Barns that required boiled eggs.  

 

Recently I learned that you can steam eggs.  I use the steaming basket that
is used for vegetables.  You put water in the pot and put in basket.  Put on
lid and bring to a boil.  Once the water is boiling you carefully place eggs
in the basket and put lid back on.  Turn down the temp when water is at a
rolling boil; it should be a simmer.  Steam eggs for 10 minutes.  Can go for
a little less time if you like a softer yolk or a little longer if you are
steaming several eggs or larger eggs.  When the time is up place eggs in ice
water.  I run cold water over eggs until they cool down enough to handle and
then put in ice water.  Let them sit for a few minutes and then tap eggs
until shell is cracked all over and peal.  This method of cooking seems to
make them easier to peal.  

 

Did you know that the fresher the egg the harder it is to peal?

 

So, if you're going to be boiling eggs purchase ones that have an older
date.

 

I get eggs from a local farmer and they are fresh; steaming them has worked
very well.
