You can also get weaving sticks in different diameters so you can use larger thread.  It would probably be easier for her is she could use a thicker yarn.  Weaving sticks are easy to make if you know anyone that does basic wood work.  Maybe someone could make a custom set for her.

It seems like someone did stick weaving one handed. You need to work with longer rather than shorter sticks (probably at least 8 inches). First line the sticks up with the threading hole hanging over the edge of a table. Lay a heavy book across them. Thread the yarn through the hole (may need to use a floss threader or thread a needle and use that to go through the sticks). Once all of the sticks are threaded, remove the book and turn the sticks around so that the threaded end now hangs across the table and the opposite end is hanging over the edge of the table. Place the book back on the sticks. Now weave around the sticks until you have covered back to the table. She might also try holding the sticks between her legs while seated.

She is an amputee.  I don't want to try too many things after she was unsuccessful with the project we tried yesterday.  I learn every day.  Yesterday I learned to always have an alternative method of teaching a craft.  I really did not enjoy watching her disappointment and feeling of failure.  
I do appreciate all the help I am receiving.

She could use the good hand to hold the yarn, then use her feet to make the loops.
