Were you looking specifically for sighted knitters to lead the group, or do the people who have expressed interest in doing so just happen to be sighted? My first suggestion would be to have blind as well as sighted knitters run the group. Learning a skill that many feel is impossible for a blind person to master from another blind person can be an empowering experience.
I have taught blind and sighted individuals how to knit, and regardless of amount of vision have had the best success with one on one in-person instruction. When the student is blind, I have them feel what my hands are doing step by step, and guide their hands step by step also. When I learned, my teacher showed me what I needed to do along with verbal instruction and explanation.
Size 8 or 9 needles and yarn on the thicker side of worsted seems to work well for beginning instruction.
