Courtney, I don't know how the Amish melt the chocolate, but, if it's a
sunny day where you are, you could set the bowl of chips in the sun for a
while.  That should melt it enough, I'd think.

I made my eggs up last night and decided to freeze them I will be dipping
them in my melted chocolate in a short while thought the kids could help me
with that! And like a good baker or candymaker I had to sample the project
last night it was so delicious!
