                              Amish Small Peanut Butter Easter Eggs

 

Remember Amish do not use electric mixers and hands make this candy.

 

Supplies:

8 ounces of cream cheese, softened

½ cup of butter, softened

  One a stick or 4 ounces

2 cups peanut butter

4 cups of powdered sugar

One package of melted chips, milk or darker choice of flavor

One third cup of shortening to add to chocolate chips for coating

 

Directions

 

1.      Mix by hand cream cheese, butter and peanut butter this is best done
with a large wooden spoon. Amish do not like the metal utensils in mixing...


2.      .Start by mixing cream cheese and butter. You should get a smooth
blend. Then add your peanut butter and mix this will. You should also get a
smooth blend of the cream cheese, butter and peanut butter. This might take
a few minutes but mix it all well.

3.      . Gradually add powdered sugar and mix well. The sugar will give
form to the eggs. You may use your hands to mix after you grease them. You
will also mix or shape your eggs with your hands. Use a steady soft touch
and make first a ball, if needed. Then shape into an oval like the shape of
an egg. Please your formed eggs on your prepared chilling tray.

4.      . Form into small eggs by hand and place eggs forms on cookie sheet
with parchment or wax paper. Refrigerate overnight.

5.      . Melt chips by the minute of time in microwave bowl, stir in
shortening and when melted, stir. If not melted continue in 30 seconds times
until melted.

6.      . Remove tray of eggs, with two forks, dip cold eggs into chocolate
and place back on tray, and refrigerate again to set.  

Makes 12 large eggs or 24 small ones.
