I have done that too. I sometimes use a size larger needle and switch back 
and forth after so many rows for a tighter and looser stitch.
Where do you get your patterns from?

I'm making another charity hat, and I just happened to choose 2 colors of
yarn where one color is a thick worsted and the other a bit thinner.
They're close enough to both use the same size needle, but there's still a
noticeable difference in the thickness of the fabric when I switch colors,
which I think adds interest.

I love making these hats.  They're quick, and there's plenty of room to
experiment while still using a basic pattern.  I'll have to remember this
little texture-changing trick.  I've wanted to try it for a while, but
always thought it would be hard to pull off.  Nope, really easy.
