It will form a ball. Take it off the heat just before all the uncooked dough transforms. I know I am not saying this well but when you do this you can easily see and/or feel that the dough becomes cohesive and forms a ball and is no longer wet feeling. Try it you will understand. If you stop just before it all becomes all uniformly non-sticky but has just a few streaks of wet mixture it will be a good consistency. Knead it until it is uniform. If it is too wet you didn't cook enough, if it is too stiff you overcooked. Cook more if undercooked or a
