Funny story. In 1978 I was in a horrible highway accident. At Christmas
time, someone brought us a rum cake. My parents came to help me and my
husband, and none of us liked rum cake. My father put it outside for the
birds. He put it on the ground and forgot about it. Later he let my guide
dog out to do her business, and the next time he looked out, my dog was
chowing down on that rum cake. He went out and put it up in the branch of a
tree. My poor dog kept staring at it as if she could will it down out of
that tree. Poor baby.
I always say I don't like drunk desserts. It just isn't my thing. I prefer
my alcohol in a glass.

Best ever rum cake
1 tsp. Sugar
1 or 2 quarts rum
1 cup dried fruit brown sugar
1 tsp. Soda
1 cup butter
2 large eggs
baking powder
lemon juice
nuts

Before starting, sample rum to check quality. Good isn't it? Now proceed.
Select large mixing bowl, measuring cup, etc. Check rum again. It must be
just right. To be sure rum is of proper quality, pour 1 level cup of rum
into a glass and drink it as fast as you can. Repeat. With electric mixer,
beat 1 cup butter in a large fluffy bowl. Add 1 seaspoon of thugar and beat
again. Meanwhile, make sure rum is still alright. Try another cup. Open 2nd
quart if necessary. Add eggs, 2 cups fried druit and beat till high. If
druit gets stuck in beaterrs, pry loose with a drewscriber. Sample rum
again, checking for tonscisticity . Next, sift 3 cups pepper or salt (really
doesn't matter). Sample rum. Sift 1/2 pint lemon juice. Fold in chopped
butter & strained nuts. Add 1 bablespoon of brown thugar (or whatever color
you can find). Wix mel. Grease oven. Turn cake pan to 350 degrees. Pour mess
into koven and ake.
Check rum again and go to bed.
