Hi, welcome to the group! And, Happy New Year as well!
I am one of three blind men in this group, and, I have been needle knitting
and loom knitting for over 33 years as of Christmas three nights ago, big
smile.
To answer your question, yes, it is very possible for a blind person to
learn how to knitt.

And, yes, there are knitting books that are available  or were available
from the Horizons For The Blind store. is a blind knitting group here that
meets ttwice a month in which the instructors will teach you how to begin
knitting.
I hope that they will speak up and introduce themselves.
