Well, the weird thing is that the voiceover is quite audible until I start
moving around on the typing keyboard.  That's when it drops back almost like
it's ducking for some other sound to take precedence.  It's as though it
hears it's own feedback and thinks it needs to back down it's own volume.  
Weird.
Thanks for the help though.  I'll keep trying to figure out what the heck I
did.
I can still use it if I slow way down and let the volume return to normal in
between letters.

Perhaps you've inadvertently turned down the voice. Use two fingers to flick

up the screen to get VoiceOver to read the entire screen and then hit the 
"volume up" button to bring the voice level up. If VoiceOver isn't talking, 
the buttons determine the volume any app your using is set at.
