Not sure if this will work for you, but my solution is to use Invert Colors in Windows Magnifier.
I first start Magnifier using Windows-key + NumPad Plus, then turn on Invert Colors using CTRL + ALT + I.

Forgive me if this has been covered before.  In recent messages I have not seen any information on this and I may need some assistance.
 
I have some usable vision but it’s very difficult for me to work with Microsoft Office products with the glaring white workspace.
 
I’ve been looking into turning on Dark Mode specifically the black work space but can’t seem to enable it.
 
In Microsoft Office I only see the options for White, Colorful, and Dark Grey and the only affect the menu and non workspace areas.  I’ve seen photos and videos of Microsoft Excel with black cells and white cell borders and that’s what I’m trying to achieve.
 
I was able to get OneNote working with a black or dark work surface but that’s it.  Word and Excel are still white and after a while it starts to get painful looking at it, squinting to see the text or just looking at the screen for anything.
 
I did enable Dark Mode for Windows and I’ve installed a dark mode plug in for Chrome.
 
I have the latest subscription of Office but when I check it still says Office 2016 for some reason.
