One of the easiest ways to do this is to use Zoom. If you create a Zoom meeting, share the screen and audio, then record it, you will get a full recording of everything. You can even narrate the recording, stating which keys you are pressing.
The Zoom client is available for free.

jaws speech / what keys are being pressed to prove to an employer the person
using jaws is not the problem?
