Mark,
This depends if the PDFs are text-based or scans. If text, you can get a 
free program called Doxilion.

Please note when installing this, it'll try to get you to install 5 other things. Just uncheck the other boxes when you install the program.
If they're scans, you'll need to use an OCR program like Finereader or Kurzweil 1000 to convert the scans to text.
This is all for Windows, there's slightly different info for the mac.
