Use tap back. It gives you the choices you are used to.  The other road is

I'm pretty confused about the new choices I get when I want to react to a
text message on my iPhone.  

What's tap back in this context?  

I have been choosing "stickers", and then trying to add an emoji.  Can I add
more than one?  I see my sighted friends doing so, but it only seems to let
me add one.

Can anyone explain these new things to me, or suggest a sensible Google
search?

 

It used to be so easy, but now it's much more complicated.
