Tracy, I'm not for sure what the tapback thing is. But yes, you can add more than one reaction. You have to go through and pick one of each time. So for instance, if you wanna do a thumbs up, you do the thumbs up, and then go back in and tap on the message and send another reaction. Then once the reactions are put into the message, then you can hit the send button.

It used to be so easy, but now it’s much more complicated.
