Beth,

You might want to call the national center and ask if they can put you in touch with blind choral directors.  Another idea is  going to the AFB website and registering for Career connect.  Through career connect you can search for mentors in your field of interest.

I don't have many suggestions.  
How about learning conducting by the instructor explaining it and you feeling her hand motions.  As for watching a video of yourself, you need sighted assistance.  How about using a reader for this.  The reader can describe what you're doing.  Better yet would be an assistant in the music department familiar with the terms and concepts you are practicing.  Is there a graduate TA who could help you?  TA is teaching assistant.  
When I had to watch videos in the past I never found a good solution.  I just asked a reader or classmate to describe it to me.  I think this would work for a video of your self too.
