Hi Ashley,
I don't know of any books off the top of my head, but one thing 
you might consider, especially for less experienced computer 
users, is installing a classic shell for Windows 7.  I have one 
on my hp and it basically makes the start menu look like Windows 
xp.  Eventually your students would learn the layout, but this 
might be a good option to get them started.
