Subject: Crock pot recipes
Good Evening - Hoping you and your family are doing well during this trying time of COVID - 19. Most of you received a crock pot at the training on 12/7/2019 at Wayman Chapel and we are passing along some additional recipes from Eva who did the training. Hope these come in handy while so many of us are staying home and cooking a bit more. Also, you will find instructions for blanching and freezing vegetables. We hope this information is helpful. Crock Pot Tortilla Soup
Crock Pot Lady - Eva Wells

Ingredients
1 Onion Chopped
1-Can Ro-Tel diced Tomatoes & Green Chilies
1-Package Taco Seasoning
1-Can Crushed Tomatoes
1-Can Black Beans
1-Can Kidney Beans
1-Can Corn
2-Cups of Chicken, Vegetable Broth
4- Large Chicken Breasts cut into chunks or ( 1-Rotisserie chicken Shredded)
4-Ounces of Cream Cheese
Salt and Pepper to Taste
Instructions
Spray your crock pot insert with Pam, Butter or brush with oil.
Add all ingredients to your Crock Pot. Cook on HIGH for 4-hours.
You may want to stir well 2-hours into cooking.
Add tortilla chips and sour cream to each bowl of soup – serve and Enjoy!
Crock Pot Chicken and Rice

Ingredients
4-Skimless Chicken Breasts or Chicken Thighs
1-Can Cream of Chicken Soup
1-Cup Chopped Onion
2-3 Cups of Chicken Broth
1-Can Peas and Carrots
2-Cups of Shredded Cheese
2-Cups of Rice (not instant rice)
Salt and Pepper to Taste
Instructions
Spray your crock pot insert with Pam or brush with oil or butter.
Add to your crock pot chicken broth, cream of chicken soup, onion and stir well.
Add peas and carrots, cheese, rice and salt and pepper to taste.
Cut chicken into chunks and stir well.
Cover and cook on LOW for 5 to 6 hours. You may want to stir well 2-hours into cooking.

Blanching foods helps reduce quality loss over time. Blanching is also utilized to preserve color, flavor, and nutritional value.
Blanching Your Produce
1. Use a pot that is big enough to fit your vegetables batches.
2. Prepare a large bowl of ice water <https://www.thespruceeats.com/how-to-make-an-ice-bath-908904> . If you are blanching multiple batches, you may need to replace the ice water - the hot vegetables will melt the ice.
3. You will also need large spoon or tongs to help remove vegetables from the boiling water.
4. Add ¼ teaspoon salt to pot of water. Salt helps the flavor and helps green vegetables stay green in color.
5. Prepare a large bowl of ice water.
6. While the water is coming to a boil, rinse, trim, or chop vegetable.
7. Once the water boils, put vegetable in the boiling water about 2 minutes. Remember you are not cooking vegetable.
8. Drain or lift out the vegetables and transfer them to ice water - move vegetables around in the water until cool. Lay vegetables in a single layer on paper towels ( you can use clean kitchen towel) and let them air dry for 20 minutes .
9. Once vegetables are in your zip lock bags push the air out of your plastic bags so there is little chance of vegetables getting freezer burn.
10. 10.Use a black marker to label each veggie bag date and name of vegetable.
11. 11.You can store each bag on top of each other in your freezer – this will save space for other items.

Crock Pot Cream Ranch Chicken with Vegetables

Ingredients
6 medium red, russet or white potatoes
2 ½ Cups Baby Carrots
1-Cup Chopped Celery
½ Cup Chopped Onion
4 Chicken Breast
2 (10.75 oz.) Cans of Cream of Chicken Soup
1 8 oz. Package Cream Cheese
1 Package Dry Ranch Seasoning Mix
½ Cup Milk
Instructions
Spray your crock pot with Pam Spray or use liner.
Quarter potatoes and place on bottom of crock pot.
Top with carrots, celery and onion then add chicken breast on top.
In a bowl mix together cream of chicken soup, cream cheese, ranch seasoning and milk.
Pour over chicken in crock pot.
Add lid and cook on LOW for 6-7 Hours or HIGH for 4-5 Hours
Serve and Enjoy!
Breakfast Enchiladas

Ingredients
1 lb. Sausage or Turkey Sausage or Hamburger Browned or 2-Cups Ham-Diced
6 Green Onions Diced
2 Cups Shredded Cheese Pepper Jack or Cheddar Cheese
6 Eggs
8 to 10 Flour Tortillas
2 Cups Half & Half or Milk
1 Tbsp. Flour
½ Tsp Salt and Pepper
8 Slices of Cooked Crumbled Bacon
Instructions
Spray your crock pot with Pam Spray or use liner.
In a large bowl add cooked meat, green onions and 1-cup cheese
Insert 1/3 cup of mixture in center of each tortilla then roll up and place closure seam down into crock pot.
Mix in a large bowl eggs, half & half, flour, salt and pepper – mix this well.
Pour over the tortillas in crock pot.
Put 1-cup of cheese on top of tortillas and crumbled bacon.
Cover with lid.
Cook on LOW for 3 hours. Or until center is done.
Serve with sour cream and salsa Enjoy!
