I worked with a student in seventh grade who also had CP and minimum use of one hand, and he was learning to use a braille note in one-handed mode. It makes for one extra step with writing, but it is definitely doable. In truth, the braille display actually helped him tremendously, as it was easy for him to track the few cells it afforded at a time.
