Hi Ashley,
I can’t speak to Bollywood or Jazzersize, but for Zumba each song is fully choreographed by the company so instructors aren’t making up any moves in advance, they just learn a bunch of dances/songs then pick the ones they want to string together for a class. Because of this model you can learn the moves in advance and feel confident that you can follow most instructors (when they’re playing the songs you know). Of course it’s helpful to tip off an instructor in advance of a class to offer more verbal cues. Learning the dance moves for each song would be a significant investment of time and energy. You could work with a particular Zumba instructor if you can find a good fit. I know the instructors learn new choreography from videos from the company so maybe you can get your hands on some videos to work through with a friend. Most instructors have a core set of songs they choose for each class then they add in a few different songs to change it up. If there’s an instructor you like you could always focus on their core songs and take a break during the songs you don’t know (or do your own thing! after all, it is about dancing to music, whether or not you’re following the set choreography).
