Jackie,

Thank you.  I try to be helpful as well as entertaining with my blogs.
And since I'm writing for a health and wellness website, I try to stress
healthiness in all aspects.

The cake recipe I made up was something I did a couple of years ago.  I
needed to make something for an event last minute, and I took stock of
what I had at home.  I just kind of created this recipe, and later I
modified it by using different flavors of cake and pudding.  I've
switched the lemon cake mix and pudding with chocolate cake and pudding
as well as butterscotch.  I recently tried pouring lemon gelatin over
the cake before icing to add more moisture and flavor, and it went over
well.

Using sugar-free pudding and Cool Whip really makes this cake a good
after-dinner dessert for anyone especially if you are watching your
sugar intake.  It is nice and light, though- perfect for summer.  I'm
glad you enjoyed.
