Bill,
Thanks for your words. I know this isn't the cooking list, but I'll give
you my recipe for Mexican lasagna. Note, my mom made this dish up, and I
added my own flare, so we don't have exact amounts.
Mexican Lasagna
Flour tortilla shells (I prefer burrito size)
2 to 4 jars salsa, depends on size (I use medium flavored)
1 lb. ground, lean turkey, can use beef too
1 pkg. taco seasoning (I use hot)
1 12 to 16 oz. can corn
1 12 to 16 oz. can Rotel tomatoes
2 to 4 cans black, sliced olives, drained
Sliced jalepenos (add as many as you want, I do about a cup)
1 onion (I prefer red)
1/2 cup sour cream
1/2 cup guacamola, or mashed advocados
Cumin (add to taste, I do about 1/2 teaspoon to 1 teaspoon)
Shredded cheese (use whatever cheese you prefer, I use 8 oz. pckg. Taco
or Mexican mix, adding in shredded pepper jack)
*can make this as spicey or unspicey as you like depending on flavor of
certain ingredients
Directions:
Brown turkey, use taco seasoning following directions on package.
Dice onion (can add onion to meat when browning if prefer) and mix with
all other ingredients except cheese and tortillas.
Add cumin in to taste, probably do 1/4 teaspoon to begin.
Spread layer of mixture on bottom of 9 X 9 baking pan. Place tortillas
on top, usually do 2 to 3, and repeat until reaching top of pan. (just
like regular lasagna)
Make sure top ends with tortillas. Sprinkle shredded cheese on top,
cover with baking foil.
Bake at 350 degrees for 30 minutes. Knife will slice through easily when
done, cheese should be melted.
*May need to bake additional 5 minutes with foil removed.
Can garnish with advocado slices, shredded lettuce and/or sour cream.

Hi, Bridget.
I appreciated reading your blog and getting that little slice of life
you presented.
You are correct that public attitudes can sometimes be the most
frustrating thing about being blind.
As you have seen your blog gives you and educational platform not
everyone has.
Hmmm, Mexican lasagna, I'll have to try that soon. Sounds tasty.
