Hello there!
I use wordpress.com, my blog is in my signature.
yes you can add them anytime you want, I also like that when you post something, that after you post it, it also gives you some tags as well, if you didn't tag you blog, you just click on them and it updates it. You can add categories after as well. Just go to the dashboard, go to posts, go to all posts, and it gives you a list of all your posts, and just click edit, and add the categories, and then update. You are good to go. Also, if you are on linkedin, twitter and facebook, you can have it be posted to all of them.
