[Stylist] How to write diary entries for a piece

It depends. Since this is a creative prose piece, I would only include dates if it's important to the narrative. If not, it's unnecessary information.

Along with what Chris said, I'd start the entries off with a date since that's usually what diary keepers do. I don't know how others do it but I used to write the date and then put a dash and then the entry.
