I too have been able to use SharePoint 2003 with Jaws very successfully.
Our agency is about to upgrade to SharePoint 2007 and the word is that it
offers more accessibility possibilities than 2003.
However, I also know from experience as Dave correctly stated that there are
many ways that SharePoint and sharepoint documents can be setup. Depending
on how SharePoint is configured will make the difference as far as how
successfully and easily you are able to navigate the SharePoint environment
with JAWS and/or Window-Eyes.
Best of luck. It helps to have some blind folks testing things as it is
being setup to ensure what's being done is usable by those using screen
readers.

For those I have worked with, we did have success using basic JAWS web
navigation commands.
