There are a lot of ways to achieve this.  One I know is by installing the
free file manager FileDir.  One of its many features is a built-in
timer/stopwatch.  Students could open FileDir, start the timer, then open
their document.  Results would have to compensate for the couple seconds it
might take them to open the document, but the timer runs in the background,
handy for timing computer tasks.
