I have been teaching Google docs, using Mozilla Firefox and NVDA, rather than Internet explorer and jaws. I chose this combination, first because Google suggested it, and second there is much less cognitive demand on a consumer using NVDA, and only needing to toggle between brows mode and focus mode, compared to using jaws and having to switch between forms mode, virtual PC mode, and enabling and disabling quick navigation keys.
That said however, I did see that freedom scientific released a webinar that might be of some assistance to you.
Understanding when to navigate the interface using virtual PC cursor, or by disabling the quick navigation keys will be the most important factor, in my opinion, in utilizing the interface. Google docs, unless I am attempting to navigate to the controls on the Google bar, I never enabled browse mode and NVDA, meaning if I were using jaws I would never use the virtual PC cursor mode, except when I want to access the Google apps, Google notifications or Google account links at the top of the page.
Check out the getting started in Google Docs with the screen reader documentation provided by Google. Don't have the direct link at the moment, or the time to go search for it :-) but if you Google getting started in Google Docs with a screen reader it should pop up just fine.
