Hi Kat,
I use OneNote a fair bit at work to keep track of meeting notes, etc. 

Microsoft Accessibility has some great resources on using OneNote. A quick search for "using OneNote with screen readers" should find their resources. 

Sometimes the cursor behaves strangely when you are reading and reviewing, but for the most part it works well for me.
