Hi Kat:

Once when I was working with the NFB national office on a project, President
Riccobono shared a good strategy for this. He had someone take a picture of
his signature, then he saved that picture as a JPG file on his computer.
Every time he needs to put an electronic signature in a document, he copies
and pastes that JPG into the document on the "signature" line. I tried this
at the time and it worked for me, as it has ever since. I've never tried to
duplicate this process on the iPhone, but I would guess that it would work
the same way--save the JPG to your photos or to a Dropbox, copy it to the
iOS clipboard, and paste it into the document.
