Kat,
Outlook has always (or at least for a very long time, as long as I've been
using it) sets itself up to use one, and only one, email address as the
default "send" address when you are creating new messages. I emphasize,
new messages, not replies, which should always be associated with the
account that was the recipient in the first place.
In my case, I have 3 email accounts set up in Outlook, and if you open
Account Settings, ALT + F, I, S, A, the dialog that opens, in the Email
tab, will show a list of these accounts. One of them will be marked as the
default account and have "send from this account by default" after it's
access type in the Type column. If you create any new message, that's the
account it's going to use to send it from.
If you're trying to force another account to be used to send from, then you
need to specify that manually when you open the new message compose box.
The From will present a dropdown that allows you to select one of the
non-default accounts as the one you wish to send from for this particular
message.
