Has your son went on day trips with the church organization?
You might want to start with a sleep over or a shut-in at the church: a familiar environment.
Or, if you are really feeling apprehensive: why not have your son invite some of his church friends to your house for a get-together.
You can assess the situation there and model some behaviors. And, they can get to know your son in an environment that is familiar for him and he feels quite comfortable.
If it is a long trip: then, usually there are fund raising efforts.
You could host one of the fund raising events and you and your son could take leadership roles in it.
You could be quite candid with the staff and address subjects that they might want to address but don't want to embarrass themselves or offend you.
church should be the first place that we let our children gain a bit of independence.
It is not always the case, but theoretically, it should be.
