The greatest resource that I can attest to is Dr. Denise Robinson, go to her site yourtechvision.com 
it really amazes me at how much kids can do on a laptop with Jaws, my daughter does all the work on it, math, science, english etc. 
Her site will give you an idea of how much can be done.

Does anyone know if there is any training geared towards kids for JAWS?
Our
school is just not making progress in this area.  My kids are very
proficient
on iPads for working, but laptop/Jaws is not on the priority
list it seems.  We
have been working on it at home some, but I just don't
know where to start
either.  I've watched videos here and there and taught
them that, but even the
list of commands I'm finding isn't helpful or
accurate
sometimes.
