Try VarMax. It's designed for the iPad and can be used wonderfully with VoiceOver. The essay materials can be easily used with a PC and JAWS, and no doubt with other screen readers.
Technical support and subject matter coaching are available by phone. As their first blind student a few years ago, I got wonderful support. An added bonus is that the course is far less expensive than BarBri.
